Last week I talked about the Dirty Dozen and the Clean 15 food lists and one of the vegetables with high pesticide residue is SPINACH.

We all know how important it is to have more fruit and vegetables in our diet. Dr Terry Wahls highlights in The Wahls Protocol that we need to have 3 cups of greens daily.


Spinach Omelette

This offers a great source of protein, healthy fats and vegetables to get you off to a good start in the morning.

Whisk 3 organic eggs

Wash 2 big handfuls of organic spinach

Sauté the spinach in the pan. Once this is done, remove and put to one side

Add a ½ teaspoon of coconut oil into the pan

Add the 3 eggs into the pan

Add some Himalayan salt over the eggs

Flip the omelette and cook further

Fill the omelette with the spinach before folding the omelette in half or have it on the side

Enjoy with some avocado


Kiwi, Spinach, Courgette Banana Smoothie

I know what you are thinking…. Why would you put courgette in a smoothie? I thought the same thing until I tried it and since then, I add this to my green smoothie. It is a great way to bulk up your fibre and get through your vegetable quota for the day more easily.

1 Kiwi

1 banana

½ organic courgette

1 handful of organic spinach

1 cup of coconut water

Blend and Enjoy!


Baked Egg Muffin with Spinach, Salmon, Onion

Line the 3 muffin trays with smoked salmon pieces

Fill the muffin trays with finely diced onion and organic spinach

Whisk 4 organic eggs and fill the muffin trays to the top

Bake in the oven at 160 -180 degrees for 20-25 minutes
